In spring, as the snows retreat up the Alps, the mountain flowers open, the deer and chamois give birth and the cows go to the Mayen pastures. Chamois, ibex, deer, eagles and even wolves are to be seen by those who know where to look.
In autumn, there are short brilliantly intense days with cold clear nights. The colours are the soft hues of mauve, violet and russet. The short hunting season gives rise to a whole series of speciality game meals as well as the opportunity to pick grapes and taste newly grown vintages.

“My friend and I had the objective to see as much wildlife as possible during rutting season. We met Gilles at 5am in the magic valley and hiked up for an hour in the dark. Gilles gave us pointers on scents and sounds and just before dawn broke we fouund a place to watch and listen to stag rutting. We spend the rest of the morning hiking and spoiting chamois, ibex and birds of prey. Gilles has better eyes than an eagle and delivered on our wildlife safari. Exceptional day !”
